His cuisine brings an exotic touch to flavours and ingredients of the Italian tradition. Some of the evergreen proposals are oyster tempura with crispy cotechino and malvasia caramelized plums, and ravioli with burrata cheese, candied lemon, Norway lobsters and colatura di alici (anchovies fish sauce). Among the new entries, Chef Fusco suggests: green dumplings with oxtail, caramelized Tropea onion, foie gras and dried figs; croaker fish on veal sauce, frosted raspberries and dried skipjack; false tartare of beet marinated in Campari with parmesan cheese and oyster leaves ice cream; coffee cake with lemon flavoured crème anglaise and coffee flavoured whip cream.
“Giuda Ballerino!” is a comics-themed restaurant: it takes its name from the motto of Dylan Dog, one of the most beloved characters of the Italian comics. Dylan Dog and many other characters (such as Mafalda, Valentina, Lupin III, Cattivik, Diabolik, Batman, the Fantastic 4) make the black and white furniture alive, reminding us the importance of irony, happiness, and courage. Light is also a salient feature, valorised by the glass ceiling, the carefully placed mirrors, and the handmade glasses from Venice.
The conference center of Bernini Bristol occupies an entire floor and it’s composed by 4 halls which can hold up to 120 people.
